Taco Wraps

Yields2 Servings

 1 cup raw walnuts
 1 tsp dried cumin
 1 tsp coconut aminos
 ½ tsp granulated garlic
 ½ tsp granulated onion
 ½ tsp freshly squeezed lemon juice
 Pink Himalayan salt, to taste
 Fresh ground black pepper, to taste
 2 collard leaves or large lettuce leaves
 ¼ cup cup grape tomatoes, halved
 ½ avocado, chopped or sliced

Place walnuts, cumin, coconut aminos, garlic, onion, and lemon juice into a food processor fitted with the "S" blade.

Process until mixed well but still chunky.

Add salt and pepper to taste, and mix.

Place half of the mixture on each collard leaf.

Top each collard leaf with half of the tomatoes and half of the avocado.

Roll up each leaf, and serve immediately!
