Pico de Gallo

Yields2 Servings

 1 roma tomato, diced
 ½ avocado, cubed
 ¼ cup red onion, chopped
 ¼ cup red pepper, chopped
 1 tbsp lime juice
 ½ tsp cumin
  Pink Himalayan salt, to taste

In a medium bowl, combine all ingredients.

Stir to combine, and taste. Add more lime juice and/or salt to taste.

Feel free to add in additional onion, or spice it up with jalapeno peppers or your favorite chili spices.

Place in your favorite bowl.

Serve immediately, or cover and chill for up to four hours prior to serving to let flavors mingle.

Serve with sliced cucumber rounds for dipping.
